This easy homemade Cinnamon Simple Syrup is perfect for adding to cocktails, coffee and so much more. You only need 3 ingredients and 5 minutes of hands on work to make a big batch that will last for weeks.

We have somewhere around 5 homemade simple syrups in our fridge at pretty much all times, and this cinnamon simple syrup is always one of them! It's perfect for adding to fall and winter cocktails, but I also love adding it to my morning latte no matter the season.

If you love to make cocktails at home, you should 100% be making your own simple syrups. They're SO easy (just water, sugar + whatever you're infusing) and they store so well. So much better than store bought!

Why We Love This Recipe

  • Quick and easy recipe: This recipe is as simple as boil, cool, and store. It's as easy as making regular simple syrup, but it's packed with extra spice from the cinnamon. Way better than store bought and so versatile.
  • Stores well: You can keep it in a mason jar/sealed container in the refrigerator, or freeze it in an ice cube tray. This recipe yields 8 fl oz of syrup, so one batch will last you a few weeks (unless you're like us and use it in pretty much everything).
  • Perfect for fall & winter recipes: Cinnamon is the ultimate warming fall/winter spice...agreed?! This cinnamon simple syrup is perfect for adding to just about anything fall or winter inspired.

Here's what you'll need to make this cinnamon simple syrup:

Ingredient Notes

  • Cinnamon sticks: Using whole cinnamon sticks to infuse this syrup brings out those intense, warm flavors. If you can't find whole cinnamon sticks, feel free to use ½ to 1 teaspoon of ground cinnamon instead.
  • Sugar: Regular granulated sugar is great in this recipe. For a more intense flavor, you could also use brown sugar. Coconut sugar should work, too! For an extra fall-flavored syrup, you can even try replacing regular sugar with maple syrup.
  • The only other ingredient you need to make this simple syrup is water. It's that easy!

How to Make Cinnamon Simple Syrup

(1) In a small saucepan, stir together sugar and water, then add the cinnamon sticks and bring to a simmer for 4-5 minutes.

(2) Turn off the heat and let the simple syrup sit for 30 minutes, then remove the cinnamon sticks. Let cool completely before using. Transfer to an airtight container and store in the refrigerator.

Don't boil it for too long, otherwise the syrup will thicken up too much.

Serving Suggestions

  • Try it on top of breakfast foods as a replacement for maple syrup. It's great on waffles, pancakes, french toast, baked oats and more!
  • Enjoy in your morning coffee, whether it's a latte, cold brew or just hot black coffee.
  • Swap out the simple syrup in martinis, whiskey sours, smashes, mimosas, spritzes, or even mojitos for a simple spin of your favorite cocktail. It's also incredible in coffee-based drinks like our Pumpkin Spice Espresso Martini or a White Russian!
  • Add it to yogurt, chia pudding, oatmeal or overnight oats as a sweetener.
  • Use it as a sweetener in our vegan eggnog.

Expert Tips and FAQs

  • Don't boil for too long: If this boils for too long, it will thicken up a bit too much. After 4 or so minutes, be sure to remove from heat to cool.
  • Spice it up: feel free to add other ingredients to this cinnamon simple syrup to change up the flavor profile. Some suggestions include 1 teaspoon vanilla extract or a small vanilla bean split in half, a few whole cloves, star anise, or an orange peel. You can also swap out regular sugar with brown sugar, coconut sugar or even maple syrup.
  • Storage: Store this simple syrup in a mason jar or any other sealed container and stash it in the fridge, where it'll keep for up to a month. 
  • Freezer storage: You can also freeze in an ice cube tray and defrost one or two cubes at a time when you need some simple syrup. When frozen, it should keep for 3-6 months, so you can enjoy it whenever!
  • This simple syrup is great as a DIY gift. Store it in a pretty glass container, wrap a ribbon around the top with a label, and you've got an awesome host/hostess or holiday gift on your hands! Pair it with a bottle of our homemade infused alcohol for an extra special gift.
