The ultimate brunch-at-home idea: build your own waffle board! We load ours up with homemade vegan and gluten free waffles, tofu scramble, vegan "bacon", plenty of fruit and other toppings. Such a fun idea for the holidays!
If you've been following us for a while, it probably doesn't come as a surprise that we LOVE building huge, colorful delicious snack/charcuterie boards.
A few of our favorites include this hummus and veggie board and this loaded vegan mezze platter, but they're not just for appetizers or dinner! Brunch boards are just as fun and they're perfect for serving a crowd.
Waffles are particularly well-suited for a brunch board. It's easy to make a big batch ahead of time and you can load them up with so many different toppings, both savory and sweet!
This is such a fun idea for the holidays (Christmas day brunch, anyone?) or any time you're serving a larger crowd. Or, make a downsized version for your immediate family. Don't forget the mimosas!
What you'll need for a waffle board
Below are our suggestions for the perfect brunch board, but ultimately, it's totally up to you. You can go as fancy and complicated or as simple and quick as you'd like!
Waffles
If you're short on time, you can certainly use an easy store-bought waffle mix or even buy pre-made waffles.
However, if you have the time, homemade waffles from scratch are always the best option!
Our homemade waffle recipe is both vegan and gluten free. It's super crispy on the exterior and soft and fluffy on the interior. We have a large Belgian waffle maker, but we only fill them part way so the waffles aren't too big for the board.
Here's the original recipe for the waffles. You can also add mix-ins like chocolate chips, blueberries, or raspberries.
Savory components
It's always a good idea to add a few savory components so you don't get a huge sugar rush too early in the day. 😉 (Plus, savory waffles are totally a thing and they're so good!)
We make a quick batch of our scrambled tofu with fresh chives. If you're not vegan, regular scrambled eggs, fried eggs or even hard-boiled are a great addition to this board.
My favorite savory addition: tofu bacon! It's salty, smoky, chewy and SO delicious.
You can also add sausage links (vegan or non-vegan), or even mini versions of this frittata (baked in muffin tins instead of a skillet).
Toppings
- Fresh fruit (bananas, berries, mango, citrus, pomegranate)
- Maple syrup
- Whipped cream
- Jam or jelly
- Peanut butter (and/or a chocolate hazelnut spread)
- Granola
- Melted butter
- Chocolate chips
- Chopped nuts (pecans, almonds, pumpkin seeds)
Serve with:
- Coffee or tea (how about this peppermint mocha?)
- Cranberry Orange Mimosa
- The Ultimate Bloody Mary Bar
