Ingredient Notes
- Silken tofu makes this recipe extra smooth and creamy. This type of tofu has a super light texture that blends well. We don't drain prior to blending, which adds a bit of extra liquid, making everything blend a bit easier. Don't try to use a different type of tofu - your texture will definitely suffer. You can use refrigerated or shelf-stable tofu. Silken tofu is super versatile – we also use it in this chocolate pie and this creamy herb dip!
- Chocolate chips: For this tofu chocolate mousse, make sure to use a good quality chocolate for rich, chocolatey flavor. We're using vegan semisweet chocolate chips but bars would work just as well. You can use chocolate that ranges from about 60% to 80% cocoa.
- Maple syrup: We're using maple syrup for some added sweetness, but feel free to sub 1:1 with agave syrup.
- Vegan whipped cream: This is an essential ingredient, as it adds the lightness and fluffiness that we associate with mousse. Plant based whipped topping is often sold in the freezer section, so make sure it comes to room temperature before adding to the mousse, otherwise it won't mix in very well.
Instructions
(1) Melt chocolate chips in a heat safe bowl in the microwave in 30 second intervals, stirring well between each interval, until fully melted.
Add melted chocolate, vanilla extract, silken tofu, and maple syrup to a blender and blend on high speed until smooth and creamy.
(2) Transfer mousse to a mixing bowl and gently fold in the whipped cream. Don't over mix, otherwise it will deflate the mousse.
Cover and refrigerate for 2-4 hours until set. Serve with more whipped cream, chocolate shavings and fruit.
Tips and FAQs
- Melting the chocolate: The easiest way to melt chocolate is by placing it in a heat safe bowl and alternating microwaving for 15-30s and stirring until fully melted. You can also use a double boiler.
- Let the melted chocolate cool slightly: Make sure to let the melted chocolate sit for a few minutes at room temperature. If you blend it while it's too hot, it could alter the silky-smooth texture of the mousse.
- Flavor additions: Change up the flavor of this tofu chocolate mousse by adding in ingredients like peppermint extract, sea salt, cinnamon, nut butter, etc.
- Serving: We love serving this creamy vegan chocolate mousse in small glass jars or ramekins topped with vegan whipped cream, chocolate shavings and fresh berries. You could also add a touch of sea salt for a sweet/salty twist. Since it's pretty rich and decadent, we suggest smaller serving sizes.
- Ways to eat: Serve immediately for a more pudding-like dessert or chill in the fridge for a few hours for a firmer, more mousse-like texture. It won't look very fluffy before it's chilled, but we promise it sets up perfectly!
- Peanut butter: If you want to create a peanut butter chocolate tofu mousse, add 2-3 tablespoons of peanut butter to the blender.
- Storage: If you have any leftovers (which is unlikely since it's that good), you can store them in an airtight container in the fridge for up to 4 days. Stir well before serving again.
- Topping ideas: We love ours topped with a simple combination of whipped cream, berries and shaved chocolate. It's also great with chopped nuts or seeds, salted caramel sauce, chocolate chips, cinnamon, etc.
As you can see in the image below, the final texture is fluffy and mousse-like. It should have plenty of air bubbles, which are created from gently folding in the whipped cream instead of blending/whisking.
Silken tofu is similar to regular tofu, except it's made with a slightly different process and is left unpressed, resulting in a soft and almost custard-like texture. It's often used in miso soup and is great for blending into sauces, smoothies, desserts, dips and so much more.
