Tofu Chocolate Mousse

Description

This Tofu Chocolate Mousse is a decadent and delicious treat that's unbelievably easy to make. It's light, velvety, and completely vegan, gluten free, and contains only 5 ingredients.


Ingredients

  • 12 ounces vegan semisweet chocolate chips
  • 16 ounces silken tofu
  • 1/2 cup maple syrup
  • 1 tablespoon vanilla extract
  • 1 1/2 cups vegan whipped cream, plus more for topping

Instructions

  1. Melt chocolate chips in a heat safe bowl in the microwave in 30 second intervals, stirring well between each interval, until fully melted.

  2. Add melted chocolate, vanilla extract, silken tofu, and maple syrup to a blender and blend on high speed until smooth and creamy.

  3. Transfer mousse to a mixing bowl and gently fold in the whipped cream. Don't over mix, otherwise it will deflate the mousse.

  4. Cover and refrigerate for 2-4 hours until set. Serve with more whipped cream, chocolate shavings and fruit. 

Notes

Silken tofu cannot be substituted with a different type of tofu. It has a silky smooth, almost custard-like texture that blends perfectly into this mousse. Other varieties will not blend well and are not suited for this recipe.

Let the melted chocolate cool slightly: Make sure to let the melted chocolate sit for a few minutes at room temperature. If you blend it while it's too hot, it could alter the silky-smooth texture of the mousse.

Storage: If you have any leftovers (which is unlikely since it's that good), you can store them in an airtight container in the fridge for up to 4 days. Stir well before serving again. 

Vegan whipped cream: This is an essential ingredient, as it adds the lightness and fluffiness that we associate with mousse. Plant based whipped topping is often sold in the freezer section, so make sure it comes to room temperature before adding to the mousse, otherwise it won't mix in very well.
