Strawberries and Cream Smoothie Bowl (Vegan)

This Strawberries and Cream Smoothie Bowl is (as the name suggests) super creamy, vegan and one of my top three go-to breakfasts. All you need are four basic ingredients, a good blender, and whatever toppings your heart desires.

I've said it before and I'll say it again: I will NEVER get sick of smoothies/smoothie bowls. My husband and I have a smoothie almost every single day - they just can't be beat when it comes to ease, portability and nutritional density.

The way I look at it, smoothies are more of a snack (perfect for post-run recovery), while smoothie bowls are a full meal. If done right, a smoothie/smoothie bowl can provide a wide range of nutrients and plenty of healthy fats, carbs & even protein in one easy serving.

How to make the perfect smoothie bowl

There are a few important things to consider when it comes to making the perfect smoothie bowl. (Trust us on these - I've easily made 1,000+ smoothies in the last few years!)

  • Use mostly frozen fruit, but let it thaw for a few minutes before using. Fresh fruit will never give you the consistency you need for a smoothie bowl. Frozen is a much better choice, plus it's often less expensive and doesn't go bad. That being said, if you throw a bunch of rock-hard strawberries in your blender and expect things to go well, it's not going to happen. Let your frozen fruit thaw for 15 minutes before blending, or speed things up by microwaving for 45-60 seconds before adding to your blender.
  • Go easy on the liquids - there's a fine line between a creamy, thick smoothie bowl and a watery smoothie bowl that doesn't hold any toppings. It's best to stick to as little liquid as possible.

  • Add some (healthy) fat for extra creaminess. Whether it's full-fat yogurt, almond or peanut butter, or even avocado, a little bit of fat creates an ultra-smooth texture. Plus, it makes for a more balanced bowl that will keep you full for longer.
  • Lastly - INVEST IN A GOOD BLENDER. If you make a lot of smoothies/use your blender at least once a day, it's well worth it to invest in a high-quality blender.

  1. Nutritional lab testing shows that more nutrients are retained when blending in a vacuum. In other words, you're getting more nutritional bang for your buck. That's especially great when it comes to smoothies!
  2. Blending in a vacuum also prevents separation and oxidation, which means you can blend something ahead of time without it turning brown and separating! (Read: prep a smoothie the night before for a super quick, on-the-go breakfast.)
  3. The blender comes with a noise reduction cover, so it's not nearly as loud as most blenders. This is a huge plus for us - we use the blender multiple times per day! Nobody wants to wake up to the sound of a noisy blender.

Description

This Strawberries and Cream Smoothie Bowl is (as the name suggests) super creamy, vegan and one of my top three go-to breakfasts. All you need are four basic ingredients, a good blender, and whatever toppings your heart desires. 


Ingredients

  • 1 banana 
  • 2 cups frozen strawberries (slightly thawed)
  • ½ cup vanilla yogurt (vegan or regular)
  • 1 tbsp maple syrup 
  • ½ tsp vanilla extract (optional)
  • Toppings: peanut butter, homemade granola, fresh berries


Instructions

  1. Blend all ingredients until smooth and creamy. Add toppings and enjoy!
