🍹 Why We Love This Recipe

  • Tropical flavors: The main flavors of this piña colada mocktail are pineapple and coconut. It's tropical perfection! Super creamy, but still light and refreshing. This is truly the ultimate poolside mocktail.
  • Alcohol free: Since not everyone can drink, this piña colada mocktail is a great drink to make when you're entertaining for a crowd. Plus, if you do want to add alcohol, it's easy to add in regular rum!
  • Vegan: This piña colada mocktail uses coconut cream and pineapple juice, so it's fully vegan/dairy free.
  • Super easy to make: Add everything to a blender, blend and enjoy!

🍍 Ingredients

Here's what you'll need to make this piña colada mocktail:

📋 Ingredient Notes

  • Non-alcoholic rum: To make this piña colada mocktail without alcohol, we used a rum alternative from Ritual Zero Proof. We love that it still adds the warm, spiced flavor of dark rum (vanilla, caramel, bitter orange) without the alcohol! They have an excellent range of zero proof liquor alternatives, including tequila, whiskey and gin. We highly recommend!
    • If you can't find a non-alcoholic rum alternative, you can simply replace it with more pineapple juice. The mocktail won't have as much depth of flavor, but it will still taste delicious.
  • Pineapple: Frozen pineapple (versus fresh) is definitely necessary in this piña colada mocktail. It's what makes this recipe so creamy and delicious – almost like a smoothie!
  • Pineapple juice: We prefer to use 100% pineapple juice (no sugar added), but if you can only find pineapple concentrate, that's okay too.
  • Lime juice: Freshly squeezed always tastes best in cocktails!
  • Coconut cream: You should be able to find small 5.3oz cans of coconut cream in most grocery stores, which is exactly the amount you need in this recipe. If you can only find a larger can, you'll just have to measure it before adding to the blender. Be sure to use full fat coconut cream – it's what makes this piña colada mocktail super thick and creamy.
  • Simple syrup: You can use store-bought or make your own by combining equal parts water and sugar in a small saucepan over medium heat until dissolved. You can also sub simple syrup with agave syrup.

🔪 Step-by-step Instructions

(1) Add the pineapple, coconut cream, pineapple juice, rum, lime juice and simple syrup to a blender and blend until completely smooth.

💭 Expert Tips and FAQs

  • Let the frozen pineapple soften slightly before adding to the blender. Otherwise, it may be difficult to blend, especially if your blender doesn't come with a tamper.
  • Cocktail umbrellas are a super fun (albeit slightly old school) way to elevate the presentation of this drink. We got ours on Amazon. (You can use leftovers in other tropical drinks like our mango mojito or guava rum cocktail!)
  • Big batch cocktail: The quantities in the recipe below make at least 4 large piña colada mocktails. You can double or even triple the quantities for a bigger batch and still fit it into a regular sized blender! Super convenient and quick for entertaining a larger crowd.
  • Serve with: A maraschino cherry (optional, but fun), a pineapple wedge and a cocktail umbrella. These piña colada mocktails are also best served in a tall glass.
  • Freshly squeezed lime juice is always best in cocktail recipes.
How do you make simple syrup?

Combine equal parts water and sugar (we typically use ½ cup of each) in a small saucepan over medium heat. Bring to a low simmer and stir until the sugar is dissolved. Remove from heat and let cool before using.
