This pineapple mimosa is super simple, refreshing, and delicious. It only has 4 ingredients, takes 5 minutes, and only requires a cocktail shaker. It's the perfect cocktail for summertime sipping!

🥗 Why We Love This Recipe

  • The best mimosa you'll ever have! You might be thinking, wait, don't I just need some pineapple juice and champagne? Yes, that's technically all you need to make a pineapple mimosa, but we add in a dash of orange liqueur and lime juice for WAY more flavor. It makes a huge difference!
  • Only four ingredients: Pineapple juice, lime juice, orange liqueur, and champagne. That's it!
  • Takes five minutes: There's no simple syrup, no muddling, zero advanced techniques needed. Just put everything (except the champagne) in a shaker, shake and pour. Top off with bubbly for the perfect drink!
  • Refreshing: This pineapple mimosa has a lovely tartness that works great as a refreshing palette cleanser. It's sweet, but not too sweet, and perfectly balanced!

Here are the key ingredients you'll need to make this pineapple mimosa recipe:

📋 Ingredient Notes

  • Lime juice: Freshly squeezed is ALWAYS best.
  • Orange liqueur: You can use triple sec, Cointreau or Grand Marnier. Grand Marnier is actually a blend of cognac and triple sec (orange liqueur), so it adds a bit more depth of flavor, but either is fine.
  • Sparkling wine/champagne: We used a brut sparkling wine in this pineapple mimosa recipe, but there are a wide variety of sparkling wines, and they vary significantly in sweetness. If you find your cocktail is too sweet, add some extra lime or pineapple juice. If it's not sweet enough, feel free to add some simple syrup or agave nectar if necessary.
  • Pineapple juice: if you have an industrial juicer and want to make freshly squeezed pineapple juice, go for it!! Otherwise, store-bought is perfectly fine. We used 100% pineapple juice with no added sugar.

🔪 Step-by-step Instructions

Fill a cocktail shaker halfway with ice. Add pineapple juice, lime juice and orange liqueur. Shake vigorously for 10-15 seconds, then strain into a cocktail glass.

Top off with 3 oz champagne. Optional: garnish with fresh pineapple and/or lime slice.

💭 Expert Tips and FAQs

  • These pineapple mimosas taste best if your champagne/sparkling wine is well chilled ahead of time! This will keep the cocktail nice and cool so you don't have to add any ice.
  • Furthermore, you can also chill the cocktail glasses before serving to keep this drink extra cool!
  • No champagne? You can also use Prosecco or Cava in these pineapple mimosas.
  • For an extra boozy cocktail, feel free to add an ounce or so of rum! You may also want to add a bit more pineapple juice to balance it out.
Can you make pineapple mimosas ahead of time?

Yes and no. You can definitely make a larger batch of the base cocktail (pineapple juice + lime juice + orange liqueur) ahead of time, but wait to add the champagne until just before serving for best results.

What's the difference between champagne and sparkling wine?

Sparkling wine can only be called champagne if it comes from a specific region in France (not surprisingly called Champagne!). In other words, all champagne is sparkling wine, but not all sparkling wine is champagne. It all has to do with where the wine is produced!

So, if you're not sure whether to use sparkling wine or true champagne in these pineapple mimosas, rest assured that either is perfectly fine!

Ingredients

  • 3 oz 100% pineapple juice (we used no sugar added)
  • ½ oz freshly squeezed lime juice
  • ½ oz orange liqueur (Cointreau, triple sec, Grand Marnier)
  • 3 oz sparkling wine/champagne

Instructions

  1. Fill a cocktail shaker halfway with ice. Add pineapple juice, lime juice and orange liqueur. Shake vigorously for 10-15 seconds, then strain into a cocktail glass.
  2. Top off with 3 oz champagne. Optional: garnish with fresh pineapple and/or lime slice. 

Notes
