Description

This Piña Colada Mocktail is creamy, dreamy, tropical perfection! With frozen pineapple, coconut cream, lime juice and a rum alternative, it's super easy to make and even easier to sip on a hot afternoon. You won't miss the alcohol!


Ingredients

  • 2 cups frozen pineapple
  • 1 5.3 oz can coconut cream (liquid included)
  • 3 oz pineapple juice
  • 3 oz non-alcoholic rum alternative*
  • 2 oz freshly squeezed lime juice
  • 2 oz simple syrup

Instructions

  1. Add the pineapple, coconut cream, pineapple juice, rum, lime juice and simple syrup to a blender and blend until completely smooth.
  2. Divide between glasses and serve with fresh pineapple wedges and a maraschino cherry.

Notes

*Non-alcoholic rum: We used a rum alternative from Ritual Zero Proof. We love that it still adds the warm, spiced flavor of dark rum (vanilla, caramel, bitter orange) without the alcohol! If you can't find a non-alcoholic rum alternative, you can simply replace it with more pineapple juice and/or coconut cream. The mocktail won't have as much depth of flavor, but it will still taste delicious. 

Let the frozen pineapple soften slightly before adding to the blender. Otherwise, it may be difficult to blend, especially if your blender doesn't come with a tamper. 

Big batch cocktail: This recipe makes 4 large piña colada mocktails. You can double or even triple the quantities for a bigger batch and still fit it into a regular sized blender! Super convenient and quick for entertaining a larger crowd. 

Coconut cream: You should be able to find small 5.3oz cans of coconut cream in most grocery stores, which is exactly the amount you need in this recipe. If you can only find a larger can, you'll just have to measure it before adding to the blender. Be sure to use full fat coconut cream.

Simple syrup: You can also swap with agave syrup.
