Strawberry Coulis

This 3-ingredient Strawberry Coulis is a super simple 30 minute recipe that can be used in cocktails, desserts, salads, and more. It sounds fancy, but it's incredibly easy to make and delicious in a number of applications.

This delicious strawberry coulis is easy to make and so versatile!

You might be asking: What is a coulis (pronounced cool-e)? It's just a thick sauce made from puréed and strained fruits or vegetables.

It's typically used as a dessert sauce, but we think it can be an awesome base for salads, marinades, or as a breakfast syrup.

Here's what you'll need to make this strawberry coulis:

Ingredient Notes

  • Sugar: Use granulated white sugar. We wouldn't recommend using brown sugar or other alternatives like honey or maple syrup.
  • Strawberries: Use fresh strawberries for the best flavor, but if they're out of season (or super expensive), feel free to use frozen strawberries.
  • Lemon juice: Freshly squeezed is always best! The stuff that comes in a bottle just doesn't taste as fresh. If you want to add some extra citrus flavor, you can add the zest of 1 lemon to the coulis at the beginning of the recipe.

Instructions

STEP 1: Add the chopped strawberries, sugar, and lemon juice to a small saucepan.

Gently mash the strawberries with a hand masher or muddler.

STEP 2: Bring to a simmer over medium heat and mash the strawberries. Reduce heat to low and let simmer for 15 minutes, at which point the fruit should be softened and broken down.

Remove from heat and let cool for 15 minutes.

The berries should be completely soft and broken down. If using frozen, you may have to cook slightly longer.

STEP 3: Use a blender or immersion blender to blend the strawberry mixture into a smooth puree.

Any blender or immersion blender will work for this.

STEP 4: Strain through a fine mesh sieve until you have extracted as much of the strawberry coulis as possible. This step removes any seeds so you have a completely smooth coulis.

If you don't mind the seeds, you can skip this step.

Serving Suggestions

  • This strawberry coulis makes for a great dessert topping. Try it on:
    • Ice cream (try our no churn vanilla or strawberry cheesecake)
    • Cheesecake
    • Pies or Tarts
    • Pudding
    • Pavlova
    • Strawberry Shortcake
  • Breakfast: Use it in place of maple syrup on pancakes or waffles. It's also delicious as a topping for yogurt (with this berry granola), or on oatmeal, overnight oats or chia pudding.
  • As a dressing: Use this strawberry coulis as a base for salad dressings.
  • Fruit leather: Spread it out on a sheet pan and dehydrate in your oven to make chewy and delicious strawberry fruit leather.
  • Cocktails and Mocktails: Use it as a base for delicious strawberry cocktails and nonalcoholic drinks:
    • Strawberry Martini
    • Strawberry Mocktail
    • Add it to lemonade
    • Add it to a Mimosa

Tips and FAQs

  • Fridge storage: Store the coulis in an airtight container in the refrigerator for up to one week.
  • Freezer storage: Freeze in ice cube trays to enjoy at a later date. They'll keep in the freezer for 3-6 months. Thaw overnight in the refrigerator before using.
  • Strawberries out of season? Feel free to use frozen berries instead of fresh.
  • Seeds: A coulis is traditionally a completely smooth puree, which is why we strain the mixture through a sieve to remove any seeds. If you don't mind the seeds, you can skip this step. 
Will the coulis thicken as it cools?

Yes, this strawberry coulis will thicken slightly as it cools, due to the natural pectin. If it looks a little thin when you remove it from the stovetop, don't worry – it will thicken in the refrigerator.

  • ¼ cup (1 ¾ oz) granulated white sugar
  • 1 tablespoon (½ oz) freshly squeezed lemon juice
