We love this springy variation of a classic cocktail: Cherry Negroni! It's just as delicious as it is gorgeous, and it's the perfect Negroni starter recipe for those that aren't used to the bitter taste.
For whatever reason, the Negroni cocktail has exploded in popularity lately in the US. It has been the top searched cocktail on Google! We're not totally sure why, but it might have something to do with the vibrant color and quintessential Italian summer feel.
We could all use a little of that right now, agreed?
In fact, just a few years ago at this time, I was preparing for a trip to Italy, where I'd have my first (and second, and tenth) Negroni. (Take me back!!!)
Some people hate the bitter taste of Campari. I love it! Plus, Negroni are meant to be sipped slowly as an aperitivo; a precursor to a delicious dinner.
My husband and I have been learning Italian since the beginning of the year, so for educational purposes (lol), we're trying as many classic Italian recipes as possible while stuck at home. We're not sure when we'll be able to travel there again, but for now, this'll do!
Negroni Ingredients
A classic Negroni is made with just a few simple ingredients: gin, sweet vermouth, Campari and an orange peel. It's vibrant red, very strong, bitter, fragrant and just a tad sweet.
If you don't love the bitterness of Campari, you might want to tone it down with a bit more vermouth.
Or, in the case of this recipe, a bit of tart cherry juice and simple syrup. It's not totally traditional, but it is delicious! Plus, the bitterness still shines through, it's just toned down a bit.
How to make a cherry negroni
This cherry Negroni is quite simple to make. In addition to gin, vermouth and Campari, you'll need some simple syrup and tart cherry juice.
To make simple syrup, combine equal parts sugar and water in a saucepan and bring to a simmer. Heat until sugar is dissolved, stirring occasionally. Remove from heat and let cool completely before adding to this cocktail.
Tart cherry juice is available at most grocery stores. We always opt for 100% juice (no sugar added) and often use tart cherry concentrate instead, which also has a number of impressive health benefits.
Add all ingredients to a cocktail shaker filled with ice. Shake vigorously for 15-20 seconds, then strain into a chilled glass (or a glass filled with ice). Twist an orange peel over the top of the drink to release the fragrant oil. Serve cold.
This cherry Negroni is best sipped slowly and enjoyed before a meal. It's especially refreshing on a hot day!

Ingredients
- 1 oz Campari
- 1 oz gin
- 1 oz vermouth
- 2 oz tart cherry juice
- ¾ oz simple syrup (optional)
- Orange peel for garnish
Instructions
- Fill a cocktail shaker with ice and add all ingredients (except orange peel). Shake vigorously for 15-20 seconds.
- Strain into a chilled glass and twist orange peel over the drink to release the fragrant oils. Enjoy cold!
Notes
Simple syrup is an optional (untraditional) ingredient. If you prefer a more authentic taste, leave it out.
