This refreshing, summery Watermelon Moscow Mule is made with fresh watermelon cucumber juice, agave mint simple syrup, lime juice, vodka and ginger beer. It's slightly sweet, cooling, minty, fizzy and perfect for entertaining!
Ingredients
First up is a simple watermelon cucumber juice that makes up the base of the cocktail, requiring just two ingredients...
- Watermelon: the juicier, the better!
- Cucumber: peeled is best for this recipe.

Next is another simple component: homemade agave mint simple syrup. Simple syrup is incredibly easy to make and only takes a few minutes of hands on work. We suggest making extra and storing in the fridge for future cocktails.
- Agave nectar: agave complements the watermelon really nicely in this recipe. However, if you don't have any, you can sub 1:1 with regular cane sugar.
- Water: the general rule of thumb for simple syrup is a 1:1 ratio of water to sugar.
- Mint leaves: you'll need about 10 fresh mint leaves for the syrup, plus a few more for garnishing.
Now that your simple syrup is made, it's time to assemble the cocktail. Here's what you'll need:
- Watermelon Cucumber Juice: the 2-ingredient juice from above takes a few extra minutes to throw together, but it's well worth the effort. So fresh tasting and naturally sweet!
- Agave Mint Simple Syrup: same goes for the simple syrup. However, if you don't have time to make it, store-bought simple syrup is perfectly fine, too.
- Vodka: the liquor of choice for this cocktail. For an untraditional version, you could also use tequila.
- Lime Juice: freshly squeezed, ALWAYS!
- Ginger Beer: for topping off each drink.
Instructions
Start with the agave simple syrup, since it takes a little while to infuse and cool.
In a small saucepan over medium-low heat, bring the agave and water to a simmer, whisking well. Remove from heat, add the mint leaves and cover the pot. Let infuse for 30 minutes.
Remove the mint leaves after 30 minutes, then let the syrup cool completely. You can store any leftovers in an airtight container in the fridge.
While the syrup is infusing, add the cucumber and watermelon to a blender and blend well. To remove the pulp, strain through a cheesecloth or fine mesh sieve. Feel free to skip this step if you don't mind pulp.
Now it's time to assemble the cocktail! Fill a cocktail shaker halfway with ice and pour in the juice, syrup, vodka and lime juice. Shake well for about 10-15 seconds, then pour into a copper mug filled with ice.
Lastly, top off with ginger beer and give it a quick stir. If you feel so inclined, garnish with extra mint leaves and a small watermelon wedge. Cheers!

Watermelon Cucumber Juice:
- 1 cup fresh watermelon, roughly chopped
- ⅓ cup cucumber (peeled and roughly chopped)
Simple Syrup:
- ¼ cup agave nectar (or cane sugar)
- ¼ cup water
- 10 mint leaves
Cocktail (for 1 drink):
- 4 oz watermelon cucumber juice
- 1.5 oz vodka
- ½ oz lime juice (freshly squeezed)
- ½ oz agave mint simple syrup
- Top off with ginger beer
Instructions
- In a small saucepan, bring agave (or sugar) and water to a simmer and whisk well. Add in mint leaves, remove from heat, cover and let sit for 30 minutes. Strain to remove mint, then let syrup cool completely.
- Meanwhile, add watermelon and cucumber to a blender and blend well. Optional: to remove pulp, strain the juice through a cheesecloth or fine mesh sieve.
- Fill a cocktail shaker halfway with ice, then add in watermelon cucumber juice, vodka, lime juice and simple syrup. Shake vigorously for 10-15 seconds, then strain into a copper mug filled with ice. Top off with ginger beer and stir. Optional: garnish with mint and watermelon slices.
Notes
You can also use store-bought simple syrup if desired.
Want a sweeter cocktail? Sub the cucumber with more watermelon or strawberries.
