The woman we have to thank for these vegan cookie ice cream sandwiches is Loren Brill. In fact, her vegan, gluten free cookie dough is part of a lifelong mission she adopted after beating cancer.
Loren committed herself to removing processed foods from her diet. I certainly applaud this commitment. It's definitely not easy to cut out all refined sugars, added preservatives and other yucky ingredients lurking in seemingly friendly products.

Sweet Loren's cookie dough is the best for these vegan ice cream sandwiches, and really all your vegan cookie dough needs. First of all, that old place-and-bake trick makes it incredibly easy to whip up a batch.
You can go for a soft and chewy texture, or you can bake the cookies for a few extra minutes to get some crispy edges, if that's your thing. I personally prefer them slightly under-baked - 12 minutes in the oven did the trick!

Now back to these ice cream sandwiches. We're hooked on Sweet Loren's cookies straight from the oven, but it's summer, so we have ice cream on the mind at all times. Naturally, these chocolate chip ice cream sandwiches were a logical progression.
No need to complicate these vegan cookie ice cream sandwiches, so we opted for classic flavors. We used Sweet Loren's gluten-free chocolate chunk place-and-bake cookies for the sandwich exteriors.
The only difficult part about making these sandwiches is letting the cookies cool long enough to avoid total ice cream meltage.
This is especially tough in our kitchen. The aroma of gently baking chocolate chip cookie dough seemed to waft throughout the house, drawing family members from their rooms to hover adoringly around our cooling racks. Dogs included, of course.
Ultimately, these ice cream sandwiches called for a second batch of cookies. (An important life lesson: always make or buy a double batch of cookies. Always!)
Once you're able to cool enough cookies for ice cream sandwiches, all that's left to do is basic assembly.
Find your favorite dairy-free ice cream, or make this super easy homemade version. Again, being purists in this case, we opted for simple vegan vanilla. Our vegan mocha ice cream would complement Loren's cookies quite nicely.

Add a healthy scoop of ice cream on to half of your cookies. Finally, top with a second cooled choco chunk cookie.

Homemade Vegan Vanilla Bean Ice Cream
- Total Time: 1 hour 10 minutes
- Yield: 8-10 servings 1x
Description
If you're not already thinking about dessert, get ready. These adorable vegan ice cream sandwiches are unbelievably easy. The homemade ice cream is just a few simple ingredients.
Ingredients
- 1 can full fat coconut milk
- ½ cup coconut cream
- ½ cup cashews, soaked for 1-2 hours
- ½ cup agave syrup
- 1 tbsp vanilla bean paste
- Large pinch of fine sea salt
Cookies:
Instructions
- Soak cashews in room temp water for 1-2 hours, then drain and rinse.
- Bake Sweet Loren's cookies according to package directions and let cool completely.
- Pre-cool ice cream maker.
- Add all ingredients in a blender and blend until smooth or creamy. Pour into ice cream maker and churn.
- Transfer to freezer-safe container and freeze 4 hours.
- Let soften at room temperature for a few minutes until serving.
