Why We Love This Recipe

  • Junk-free: These popsicles are naturally sweetened with honey, agave, or maple syrup and have none of the refined sugars you'd find in store-bought popsicles.
  • Incredibly easy: A lot of recipes advertise themselves as being easy, but this one actually is. Just mix all of the (three) ingredients in a bowl, pour them into molds, and freeze. That's it. It's totally fool-proof.
  • Sweet, tart, and super refreshing: These are the perfect summer treat, thanks to the natural tart flavor of lemon juice combined with the sweet flavor of the honey.

Here's what you'll need to make these lemon popsicles:

Ingredient Notes

  • Honey: We like the sweet flavor of honey in these popsicles, but you could also use agave or maple syrup.
  • Lemon juice: We always opt for freshly squeezed lemon juice when we're making these popsicles, as it provides a tart and refreshing flavor that really shines. The bottled stuff usually contains preservatives, so it just doesn't taste the same as fresh.
  • The only other ingredient you need is cold water- it's that easy!

Instructions

(1) Whisk ingredients together until well combined (or add everything to a blender and blend until combined).

Whisk or blend - either is fine, but make sure the honey is fully incorporated.

(2) Pour the mixture into popsicle molds and freeze until completely set, about 8 hours. 

Remove from popsicle molds and store in an airtight container in between layers of parchment paper to prevent the popsicles from sticking together.

I like to put lemon rounds in the middle for presentation, but that's completely optional.

How to customize your lemon popsicles

  • To make your lemon popsicles creamier, sub out some water for an equal amount of greek yogurt (vegan or non-vegan) or full fat coconut milk.
  • For an extra refreshing version, swap water with coconut water.
  • To make a lemon-lime popsicle, swap half of the lemon juice with lime juice.
  • To make a cherry lemon popsicle, add in 1 cup of frozen cherries.
  • To make strawberry lemonade popsicles, add in 1 cup of frozen raspberries.
  • Add a shot or two of tequila to the blender to make tequila-spiked lemon popsicles. Vodka would also be a great choice here!
    • Note: if using alcohol, it's best to use stainless steel popsicle molds, which get colder and help freeze the popsicle despite the liquor. They also may take longer to freeze than regular popsicles. (Try these Watermelon Prosecco Popsicles next!)

Tips and FAQs

  • Storage: Once you remove the lemon popsicles from the mold, stack them in an airtight container, with sheets of parchment paper in between each popsicle to prevent sticking.
  • Get rid of air bubbles by gently tapping the mold on your countertop before placing in the freezer.
  • Stainless steel molds: We find that these lemon popsicles release from stainless steel molds much easier than they release from plastic molds. For that reason, we always recommend using stainless steel molds when making popsicles.
  • No popsicle molds? If you don't have a popsicle mold, you can try an ice cube tray, a muffin tin, or paper/plastic cups.
How long does it take for lemon popsicles to freeze?

It will take a minimum of 4 hours for popsicles to freeze, but we recommend keeping them in the freezer for 6-8 hours, or--even better--overnight.

How long can you store homemade popsicles in the freezer?

You can keep these frozen for about 6 months if they are stored in an airtight container. Any longer than that and they will start to have freezer burn.

What do I do if my popsicles are stuck in the mold?

We like to run the popsicle mold under warm water for 10-15 seconds. You can also leave the molds out on the counter for 5-10 minutes. The outer layer of the popsicle will melt, making it very easy to remove from the mold.

    I love making these popsicles for my kids. They always want a sweet treat in the summer but I don’t like all of the unnecessary dyes and sugars in popsicles at the store, this was a great solution and they are super tasty.
