Easy Homemade Mango Popsicles

Why We Love This Recipe

  • Incredibly easy: A lot of recipes advertise themselves as being easy, but this one actually is. Just add all of the (four) ingredients to a blender, pour them into molds, and freeze. That's it. It's totally fool-proof.
  • Sweet, tart, and super refreshing: These are the perfect summer treat, thanks to the natural sweet/tart flavor of mangoes combined with the tropical flavor of coconut and lime.
  • Junk-free: These popsicles are naturally sweetened with agave syrup, and have none of the refined sugars you'd find in store-bought popsicles.

Ingredients

Here's what you'll need to these mango popsicles:

Ingredient Notes

  • Mango: We used frozen mango for a couple reasons. First off, it's usually easier to find, and it's often more cost effective. Second, it comes pre-cut, which saves a lot of time cutting mangoes and cleaning up sticky knives and cutting boards. Of course, if you want to use fresh mango, that's totally fine! If you're using frozen mango, we like to let it thaw out on the counter for 10-15 minutes, it makes the mango easier to blend, and more importantly, easier to pour into popsicle molds.
  • Coconut water: We opted for coconut water to add a bit more tropical flavor, but since the taste of coconut water can be a bit polarizing, you can substitute for regular water instead. You can also use a juice of choice, like pineapple or orange juice.
  • Lime juice: Lime juice helps to balance out the sweetness of the mango, and using freshly-squeezed lime juice will really elevate the flavor of your popsicles.
  • Sweetener: We opted for agave syrup, but you could also use maple syrup, honey (non-vegan), or even stevia if you're looking to cut down on the sugar. Or, leave it out completely for a sugar free option.

Step-by-step Instructions

(1) Add mango, coconut water, lime juice, and agave syrup to a high speed blender and blend until smooth and creamy

(2) Pour into popsicle molds (ours hold 2.5 fl oz each), and freeze for 6-8 hours, or overnight.

Remove from molds and enjoy!

How to Customize Your Mango Popsicles

  • Add a shot or two of tequila to the blender to create tequila-spiked mango popsicles.
    • Note: if using alcohol, it's best to use stainless steel popsicle molds, which get colder and help freeze the popsicle despite the liquor. They also may take longer to freeze than regular popsicles. (Try these Watermelon Prosecco Popsicles next!)
  • Sub out some mango for an equal amount of pineapple to create pineapple mango popsicles.
  • Add 1 tablespoon of Tajin seasoning for a spicy kick.
  • To make your popsicles creamier, sub out some coconut water for an equal amount of greek yogurt (vegan or non-vegan) or full fat coconut milk.
  • To make a cherry mango popsicle, sub out half of the mango for frozen cherries.
  • To create a popsicle with fruit chunks inside, set aside about ½ cup of frozen mango. Don't add it to the blender, and blend the remaining mangos as you normally would. Then add the ½ cup unblended mango to the blender and pour into the popsicle molds.
  • Other flavor ideas: Sub half of the mango with strawberries, banana, raspberries, passion fruit, etc.

Expert Tips and FAQs

  • Use fresh or frozen fruit: We like using frozen mango because it saves on prep time, but you can also use fresh mango if preferred. Make sure to use ripe mango, otherwise the flavor won't be as sweet.
  • We like to let the mango thaw out a bit at room temperature. This makes the blended mixture a bit less icy and chunky, which makes it a lot easier to pour into the molds. You can also pop the frozen mango in the microwave for about 30 to 60 seconds to thaw it out more quickly.
  • Storage: Once you remove the popsicles from the mold, stack them in an airtight container, with sheets of parchment paper in between each popsicle to prevent sticking.
  • Get rid of air bubbles by gently tapping the mold on your countertop before placing in the freezer.
How long does it take for popsicles to freeze?

It will take a minimum of 4 hours for popsicles to freeze, but we recommend keeping them in the freezer for 6-8 hours, or--even better--overnight.

How long do these popsicles keep in the freezer?

You can keep these frozen for about 6 months.

Which popsicle molds should I use?

We really like these stainless steel popsicle molds. We've found they're the most reliable and freeze fastest, but feel free to use anything you have on hand.

What do I do if my popsicles are stuck in the mold?

We like to run the popsicle mold under warm water for 10-15 seconds. You can also leave the molds out on the counter for 5-10 minutes. The outer layer of the popsicle will melt, making it very easy to remove from the mold.

What do I do if I don't have a popsicle mold?

If you don't have a popsicle mold, you can try an ice cube tray, a muffin tin, or paper/plastic cups.
