This springy, refreshing salad is made with thinly sliced snow peas, cucumbers, radishes, vegan feta cheese and an herby, lemony vinaigrette. It's a fantastic side dish with plenty of crunch!
This delicious (and might we say, gorgeous!) salad makes great use of extra spring produce. It's just a few ingredients and comes together in about 15 minutes.
Perfect for serving alongside a light spring dinner, or as a refreshing lunch. You could also add white beans for a bit more heft, or even another protein for a full meal.
Snow Pea Salad Ingredients
- Snow peas: cut snow peas on a bias. You can also substitute with regular snap peas!
- Shelled peas: Fresh, shelled peas add extra texture and freshness to this recipe. Rather than shell them yourself, you can find them pre-shelled at many stores.
- Radishes: regular radishes are perfectly fine, but you could also sub for watermelon radish for an extra pop of color. To slice radishes into matchsticks, first cut the radish into thin rounds. Then, slice each round into thin sticks.
- Cucumber: we find that baby cucumbers are easiest to prepare for this recipe. Slice them into super thin coins (this is much easier if you have a food processor attachment that does it for you!). (If you like this pea salad, try this cucumber salad next.)
- Vegan feta: We most often use VioLife vegan feta. It's delicious! If you're not vegan, regular feta works, too.
Lemon herb vinaigrette
I LOVE this super simple vinaigrette. It's perfect for just about any spring salad.
Packed with fresh herbs (dill and mint), freshly squeezed lemon juice and lemon zest, it has a ton of flavor. It's zesty, fresh-tasting and tangy. Plus, if you're growing fresh herbs in your garden, it's a good way to use them up.
To make this vinaigrette, simply whisk together freshly chopped dill and mint, lemon juice, lemon zest, EVOO, a dash of agave for a touch of sweetness, salt and pepper.
Alternatively, add everything to a jar or container, seal and shake vigorously. Perfect for storing any leftovers!
This lemon herb vinaigrette also makes for a great marinade.

Ingredients
- 3 cups fresh snow peas, sliced thinly on a bias
- ¾ cup fresh, shelled peas
- 8 radishes, sliced into thin matchsticks
- 1 cup thinly sliced cucumber
- ¾ cup vegan feta cheese (or regular)
Vinaigrette:
- 1 ½ tbsp fresh chopped dill
- 1 ½ tbsp fresh chopped mint
- ⅓ cup olive oil
- 3 tbsp lemon juice (freshly squeezed)
- 1 tbsp lemon zest
- 2 tsp agave (optional)
- 1 tsp salt
- ¾ tsp pepper
Instructions
- Prepare all salad ingredients and add toss in a large bowl.
- Whisk together vinaigrette ingredients or add to a jar, seal and shake well.
- Pour over salad, toss and enjoy!
Notes
To slice radishes into matchsticks, first cut the radish into thin rounds. Then, lay each round flat and slice into thin sticks.

Another excellent recipe, the flavors were amazing together! I did maple syrup for the sweetener, but otherwise followed the recipe exactly. We had it over mixed greens just to add a few more veggies.
