S'mores Rice Krispie Treats

These vegan s'mores rice krispie treats are the easy, kid-friendly summer dessert recipe you need! Perfect for a quick dessert and especially great for feeding a crowd.

Whenever we make these, the entire tray is gone within hours. (I'm a particularly notorious offender, known for having about 3 at a time).

They're SO good, so easy to make, and who doesn't love the ultimate summer dessert trio of marshmallows, graham cracker and chocolate?

Plus, these are vegan, naturally gluten free, and easy enough that your kids can lend a hand. Make a double batch if you're having company –– they won't last long!

Ingredients

  • Vegan butter: if you don't have any, coconut oil should work as a 1:1 substitute. (We haven't tried it, but have seen other recipes that use coconut oil with success!)
  • Vegan marshmallows: we typically use mini vegan marshmallows, which melt faster and more evenly. If you can only find the larger ones, we suggest roughly chopping them first to speed up the process.
  • Vanilla extract: for flavor.
  • Rice cereal: you can either use the classic rice krispies cereal we all know and love, or use a brown or white rice cereal alternative.
  • Graham crackers: we used gluten free, but of course regular will work, too.
  • Chocolate: we use vegan dark chocolate chips, which are melted and drizzled over the finished rice krispie treats. Add in a small amount of coconut oil to make it easier to drizzle.

Instructions

Place the graham crackers in a food processor and pulse until they form crumbs. If you don't have a food processor, place them in a plastic bag and smash with a rolling pin.

Stir together the rice cereal, 1 cup of graham cracker crumbs and 2 cups of mini marshmallows and set aside. In addition to using graham cracker crumbs on top of these rice krispie treats, we also use them inside for extra s'mores flavor!

Melt the butter in large nonstick pot over medium heat. We use a nonstick dutch oven. Once melted, add vanilla extract, then stir in one 10 oz bag of vegan marshmallows.

Stir frequently using a silicone spatula so the marshmallows don't stick. Be patient - vegan marshmallows take longer to melt than regular marshmallows. They will eventually melt completely, so don't rush by turning up the heat.

Once the marshmallows are completely melted and soft, add in the cereal/graham cracker/marshmallow mixture and stir immediately until well incorporated. This will require a bit of arm work –– consider it a pre-dessert workout!

Line a 9 x 13 pan with parchment paper and press the rice krispie mixture into the pan. Use your hands or a flat measuring cup to press the mixture flat. Let cool completely in the refrigerator. 

We suggest slicing the rice krispie treats before drizzling chocolate as this makes them easier to serve. However, you can also drizzle first and cut later. Up to you!

Meanwhile, melt chocolate chips in microwave in 30 second intervals, stirring well between each interval, until fully melted. Stir in the coconut oil (this makes the chocolate easier to drizzle) and drizzle over rice krispie treats.

Top with remaining ⅓-1/2 cup graham cracker crumbs. Refrigerate until chocolate is hardened. Voilà: s'mores rice krispie treats!

Storage

Store leftovers in an airtight container at room temperature. You can place parchment paper between each layer to prevent sticking.

If your house is warm, store in the refrigerator to prevent the chocolate from melting.

Homemade rice krispie treats store well for about 3-4 days. After that, they'll still be fine to eat, but might start to get a bit stale. (We don't think you'll have any issues eating all of these in such a short timeframe, though!)

  • ⅓ cup vegan butter
  • Two 10 oz bags mini vegan marshmallows*
  • 1 tsp vanilla extract
  • 5 cups rice krispie cereal
  • 8 oz graham crackers (we used gluten free)
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil (optional)

Notes

*If you can only find large vegan marshmallows, quarter them before adding to the pot (this helps them melt faster and more evenly).
