S'mores Rice Krispie Treats

Description

These vegan s'mores rice krispie treats are the easy, kid-friendly summer dessert recipe you need! Perfect for a quick dessert and especially great for feeding a crowd.


Ingredients

Scale
  • 1/3 cup vegan butter
  • Two 10 oz bags mini vegan marshmallows*
  • 1 tsp vanilla extract
  • 5 cups rice krispie cereal
  • 8 oz graham crackers (we used gluten free)
  • 1 cup dark chocolate chips
  • 1 tsp coconut oil (optional)

Instructions

  1. Place the graham crackers in a food processor and pulse until they form crumbs. If you don't have a food processor, place them in a plastic bag and smash with a rolling pin.
  2. In a large mixing bowl, stir together rice cereal, 1 cup of graham cracker crumbs and 2 cups of mini marshmallows. Set aside.
  3. Melt butter in large nonstick pot over medium heat. Once melted, add vanilla extract, then stir in one 10 oz bag of vegan marshmallows. Stir frequently using spatula. Be patient - vegan marshmallows take longer to melt. Once the marshmallows are completely melted and soft, add in the cereal/graham cracker/marshmallow mixture and stir immediately until well incorporated. 
  4. Line a 9 x 13 pan with parchment paper and press the rice krispie mixture into the pan. Use your hands or a flat measuring cup to press the mixture flat. Let cool completely in the refrigerator. 
  5. Meanwhile, melt chocolate chips in microwave in 30 second intervals, stirring well between each interval, until fully melted. Stir in the coconut oil (this makes the chocolate easier to drizzle) and drizzle over rice krispie treats. Top with remaining 1/3-1/2 cup graham cracker crumbs. Refrigerate until chocolate is hardened.
  6. Enjoy! Store leftovers in an airtight container. If your house is warm, store in the refrigerator to prevent the chocolate from melting.

Notes

*If you can only find large vegan marshmallows, quarter them before adding to the pot (this helps them melt faster and more evenly).

We suggest slicing the rice krispie treats before drizzling chocolate as this makes them easier to serve. However, you can also drizzle first and cut later.
