Grilled Cauliflower Steaks with White Bean Salad

Kick off grilling season with these Grilled Cauliflower Steaks with a refreshing White Bean Salad and chimichurri! Make the salad and sauce ahead of time and bring to your next summer BBQ.

I first tried making cauliflower steaks about a month ago - now, I want them for dinner a few times a week! They're so easy to make there are endless pairing options.

Now that it's finally warm enough to fire up the grill, I imagine we'll be serving these on a weekly basis.

We paired this cauliflower steak with a simple, refreshing white bean salad. Red bell peppers, red onion, fresh herbs and lemon pair perfectly with creamy white beans. The salad is good enough to serve on its own! The sauce is a blended spinach chimichurri with plenty of fresh herbs, olive oil and vinegar.

We love that this recipe can be easily adapted with different proteins. If you have family members that aren't vegan/vegetarian, grill steak, chicken or shrimp alongside these cauliflower steaks.

As long as the side dishes are suitable to all diets, it's easy enough to make a few different mains! The chimichurri sauce also pairs well with just about any protein, so go ahead and make a big batch.

If you've never grilled cauliflower steaks, there are a few things to note:

  • You can get 2-3 good steaks out of one head of cauliflower, so prepare accordingly. We usually buy 2 heads to serve 4 people.
  • To prepare the steak, trim the stalk, leaving about 2 inches intact. Cut thick slices (about 1-1 ½ inch) straight down the middle of the head, keeping the florets intact. Some florets may fall off - that's okay. There will also be quite a bit of cauliflower leftover - we simply roast the rest. You could also use the leftovers to make cauliflower rice, or steam it, let cool and freeze for later.

  • If you don't have access to a grill, you can roast these instead. Be sure to brush olive oil and salt on both sides and flip halfway through cook time.
  • The cauliflower steaks cook pretty quickly on the grill - depending on how hot your grill is, it may only take 5 minutes on each side.

These Grilled Cauliflower Steaks with White Bean Salad are especially perfect for Memorial Day or any other summer gathering.

Grilled Cauliflower Steaks with White Bean Salad

Kick off grilling season with these Grilled Cauliflower Steaks with a refreshing White Bean Salad and chimichurri! Make the salad and sauce ahead of time and bring to your next summer BBQ.


Ingredients

Scale
  • 2 heads cauliflower, cut into 1-1 ½ inch steaks
  • 2 tbsp neutral, high heat oil
  • Salt to taste

White Bean Salad:

  • 2 15. oz cans white beans
  • 1 red bell pepper, diced
  • ½ cup cherry tomatoes, quartered
  • ⅓ cup diced red onion
  • ¼ cup fresh parsley
  • 2 tbsp fresh cilantro
  • ¼ cup olive oil
  • 1 tsp freshly squeezed lemon juice
  • 1 ½ tbsp champagne vinegar (optional)
  • 1 tsp agave
  • Salt + pepper to taste

Spinach Chimichurri:

  • 1 cup spinach
  • ½ cup fresh parsley
  • ½ cup fresh cilantro 
  • ½ of a small jalapeño, deseeded and minced 
  • 2 garlic cloves, minced
  • 2 tbsp lemon juice
  • 1 tbsp champagne vinegar 
  • ¾ tsp kosher salt
  • ⅓ cup olive oil 

Instructions

  1. Heat grill to medium-high. 
  2. Prepare cauliflower steaks by trimming stem and slicing into 1-1 ½ inch thick steaks. You can get 2-3 good steaks out of 1 head of cauliflower. Save any leftover florets for roasting, turning into cauliflower rice or steaming and freezing for later. 
  3. Brush each side of cauliflower steak with oil and salt. Grill for 5-7 minutes on each side, until charred and fork tender. 
  4. Meanwhile, add all chimichurri ingredients to a blender or food processor. Pulse until well combined. 
  5. In a bowl, whisk together olive oil, lemon juice, vinegar, salt and pepper. Add remaining ingredients for white bean salad and stir well. 
  6. To plate, top white bean salad with cauliflower steak, then drizzle with chimichurri. Enjoy!
