Easy Homemade Mango Popsicles

Description

With just 4 ingredients and about 5 minutes of total prep time, these easy homemade mango popsicles are the perfect summer treat. They're super simple, vibrant, and refreshing.


Ingredients

  • 3 cups frozen mango
  • 1/2 cup coconut water
  • 1/3 cup agave agave syrup
  • 1/4 cup freshly squeezed lime juice

Instructions

  1. Add mango, coconut water, lime juice, and agave to a high speed blender and blend until smooth and creamy.
  2. Pour into popsicle molds (ours hold 2.5 fl oz each), and freeze for 6-8 hours, or overnight.

Notes

Use fresh or frozen fruit: We like using frozen mango because it saves us time, but you can also use fresh if preferred.

If you have time, let the frozen mango thaw out a bit (10-15 minutes) at room temperature. This makes the blended mixture a bit less icy and chunky, which makes it a lot easier to pour into the molds. You can also pop the frozen mango in the microwave for about 30 to 60 seconds to thaw it out more quickly.

Using freshly squeezed lime juice will really improve the flavor of your pops.

Feel free to sub out coconut water for regular water, juice (pineapple or orange), coconut milk, or even greek yogurt. 

Storage: Once you remove the popsicles from the mold, stack them in an airtight container, with sheets of parchment paper in between each popsicle to prevent sticking.

Get rid of air bubbles by gently tapping the mold on your countertop before placing in the freezer.
