  • Super light: This watermelon fruit salad is the perfect side dish at a BBQ because it's so light that it won't fill you up, even if you go back for seconds (or thirds!). It's also great as a refreshing, easy dessert or snack on a hot day.

Here's everything you'll need to make this watermelon fruit salad:

📋 Ingredient Notes

  • Watermelon: Watermelons can be hit or miss, so be sure to pick a good one. Some tips:
    • Your watermelon should feel heavy for it's size (this means it's super juicy).
    • It should have a nice yellow (almost the color of a slightly ripe banana) splotch on it from where it was resting on the ground.
    • Try knocking on it - it should provide a nice "bounce" and have a hollow sound.
    • It shouldn't be shiny.
  • Fresh mint and lime: Using fresh mint and freshly squeezed lime juice will provide the refreshing notes that are key to this salad's addictive flavor.
  • Agave: feel free to sub with another liquid sweetener like honey.

🔪 Step-by-step Instructions

(1) Make the dressing: whisk together 2 tablespoon agave, 2 tablespoon lime juice, 1.5 teaspoon lime zest and 1 tablespoon of fresh chopped mint.

(2) Prep 4 cups of watermelon and 1.5 cups each of cherries, raspberries, and strawberries and place in a large bowl. Drizzle dressing over top and lightly toss.

(3) Garnish with some torn mint.

💭 Expert Tips and FAQs

  • Not a fan of mint? This watermelon fruit salad is also fantastic with fresh basil!
  • Fresh lime and mint go a long way in taking this watermelon fruit salad to the next level. They really enhance the flavor of fresh watermelon and berries, making this the most flavorful fruit salad you'll make all summer!
  • If you have a cherry pitter, use it! It will make prep much easier. If you don't have a cherry pitter, you can use a chopstick to easily remove the pits. Remove the stem and hold the cherry firmly in your hand. Stick the chopstick through the middle of the cherry and the pit will pop out of the bottom.
  • We like making this salad in a big serving bowl or platter, and then serving it family style at the center of the table.
  • We recommend eating this watermelon fruit salad immediately after you make it. As this salad sits in the fridge, the fruits continue to release moisture, making the salad soggy and watery. It still tastes good, but the textures are best when served fresh.
  • To add a note of saltiness, feel free to add crumbled feta cheese (vegan or regular) to this salad.
  • We love the monochrome pink/red berries and watermelon in this salad, but you can absolutely switch it up by adding in different berries like blueberries or blackberries, or even mango, pineapple, kiwi, peaches, etc.

Ingredients

Salad:

  • 4 cups watermelon, cubed into 1 inch pieces
  • 1 ½ cups strawberries, sliced into rounds
  • 1 ½ cups raspberries
  • 1 ½ cups cherries, pitted and halved

Dressing:

  • 2 tbsp freshly squeezed lime juice
  • 1 ½ tsp lime zest
  • 2 tbsp agave syrup
  • 1 tbsp of fresh mint, finely chopped


Instructions

  1. Whisk together agave, lime juice, lime zest and mint. 
  2. Prep watermelon and berries and place in a large bowl. Drizzle dressing over top and lightly toss. 
  3. Garnish with some torn mint.

    I made this salad for a weeknight dinner and it was a big hit. The dressing kicks it up a notch and makes it an outstanding dish. I didn't have agave syrup so used honey as suggested. I also had blueberries on hand so I threw in a handful. This was a wonderful summer salad. I'm probably going to make it again for a larger group! Thanks for sharing!!

    Made a double-batch for a get-together and everyone loved it. Followed the recipe as written except I added a little extra lime juice and mint at the end. Perfect, refreshing treat on a hot summer day.

    Lovely summer salad. I did change the Cherries for Blackberries (I don't like Cherries) I also add Prawns and Parma Ham for a full summer meal!

    Excellent! Exactly what I hoped it would be — refreshing, unusual, and aesthetically pleasing. I ended up with pomegranate because I couldn’t find cherries, and I think I’d do it again! Definitely a great summer dish.

    I’ve made this several times. Didn’t have agave so used maple syrup. It is so delicious and feeds a lot of folks so great to bring to a dinner party.

    I did not like the lime dressing. Fortunately, I tasted it before putting it on the salad. Used orange juice and homey instead. Everyone loved the salad, especially the addition of mint.

    This salad is so very delicious, and everyone loved all of the flavors. I substitute basil, for the mint. Added a little honey dew, another time I made it.
