- Watermelon: Watermelons can be hit or miss, so be sure to pick a good one. Some tips:
- Your watermelon should feel heavy for it's size (this means it's super juicy).
- It should have a nice yellow (almost the color of a slightly ripe banana) splotch on it from where it was resting on the ground.
- Try knocking on it - it should provide a nice "bounce" and have a hollow sound.
- It shouldn't be shiny.
- Fresh mint and lime: Using fresh mint and freshly squeezed lime juice will provide the refreshing notes that are key to this salad's addictive flavor.
- Agave: feel free to sub with another liquid sweetener like honey.

(1) Make the dressing: whisk together 2 tablespoon agave, 2 tablespoon lime juice, 1.5 teaspoon lime zest and 1 tablespoon of fresh chopped mint.
(2) Prep 4 cups of watermelon and 1.5 cups each of cherries, raspberries, and strawberries and place in a large bowl. Drizzle dressing over top and lightly toss.
(3) Garnish with some torn mint.

Ingredients
Salad:
- 4 cups watermelon, cubed into 1 inch pieces
- 1 ½ cups strawberries, sliced into rounds
- 1 ½ cups raspberries
- 1 ½ cups cherries, pitted and halved
Dressing:
- 2 tbsp freshly squeezed lime juice
- 1 ½ tsp lime zest
- 2 tbsp agave syrup
- 1 tbsp of fresh mint, finely chopped
Instructions

I made this salad for a weeknight dinner and it was a big hit. The dressing kicks it up a notch and makes it an outstanding dish. I didn't have agave syrup so used honey as suggested. I did not like the lime dressing. Fortunately, I tasted it before putting it on the salad. Used orange juice and homey instead. Everyone loved the salad, especially the addition of mint.
