Description

You only need 3 ingredients and 5 minutes of prep time to make these refreshing homemade Lemon Popsicles. They're beyond easy to make, delicious, and make for the perfect summer treat (best enjoyed poolside)!


Ingredients

  • 3 cups water
  • 3/4 cup freshly squeezed lemon juice
  • 1/3 cup honey, agave or maple syrup

Instructions

  1. Whisk ingredients together until well combined (or add everything to a blender and blend until combined). 
  2. Pour the mixture into popsicle molds and freeze until completely set, about 8 hours. 
  3. Remove from popsicle molds and store in an airtight container in between layers of parchment paper to prevent the popsicles from sticking together. 

Notes

Storage: Once you remove the popsicles from the mold, stack them in an airtight container, with sheets of parchment paper in between each popsicle to prevent sticking. You can store in the freezer for up to 6 months.

Get rid of air bubbles by gently tapping the mold on your countertop before placing in the freezer.

Lemon juice: We always opt for freshly squeezed lemon juice when we're making these popsicles, as it provides a tart and refreshing flavor that really shines. The bottled stuff usually contains preservatives, so it just doesn't taste the same as fresh.
