Ingredients and Notes

Here's what you'll need to make these carrots:

Carrots: You can use regular or heirloom carrots in this recipe.

Feta: Be sure to break it up into pieces before blending.

Yogurt: You can use regular or nondairy yogurt - just make sure it's plain.

Fresh herbs: We used parsley, dill, basil, mint, and chives, but you can use whatever fresh herbs you're a fan of, including cilantro, tarragon, etc. You can also use just 2-3 herbs instead of 5 different types - we just like the combination of those flavors!

Step-by-step Instructions

PREP: Preheat oven to 400˚F. Wash and peel carrots.

STEP 1: Toss carrots in olive oil and spices. Roast for ~35 minutes, stirring every 15 minutes, until fork tender and crisp. The time may be shorter or longer depending on the size of your carrots.

STEP 2: Meanwhile, add all green goddess ingredients to a blender or food processor and blend until smooth.

STEP 3: Spread the sauce on a large platter, top with carrots and garnish with more feta, pomegranate and parsley.

Expert Tips and FAQs

  • Make ahead: You can make the green goddess sauce up to a few days before serving - just keep it stored in an airtight container.
  • Storage: Keep leftovers in an airtight container in the fridge for up to 4 days.
  • Break the feta into pieces before blending: If you skip this step, it will take a lot longer to get the green goddess to become smooth.
  • Fresh herbs are the key to a green goddess. You don't have to use the exact herbs in the recipe and can feel free to substitute in your favorites, just make sure to keep the amount at 2 cups total.
  • Try other vegetables: You don't have to use carrots in this recipe. You could also try squash, parsnips, potatoes, or asparagus.

Description

Tender roasted carrots are plated atop a tangy and herbaceous green goddess dip to make the perfect holiday side dish. It's super fresh, easy to make, and looks incredibly festive.


Ingredients

Carrots:

  • 1 ½ lbs carrots, halved
  • 3 tbsp olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp cumin
  • ½ tsp smoked or regular paprika
  • 1 tsp kosher salt
  • ¼ tsp black pepper

Green goddess:

  • 7 oz feta cheese
  • ½ cup plain yogurt
  • 2 garlic cloves
  • Juice from 1 lemon (~2 tbsp)
  • 1 tsp lemon zest
  • 2 cups total fresh herbs - we used ½ c parsley, ½ c dill, ½ c basil & ¼ c each mint and chives)
  • 2 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp pepper

    Epic carrots. I made them with the three bean soup for New Year’s Eve dinner. My family was impressed. I’m not the cook in the house, I’m the baker, and my husband is our Michelle chef! lol. But I like to make yummy things from time to time. This was an epic side dish. I wasn’t sure if the herbs were to be tightly packed whole or chopped the measured. I went with whole. I ended up adding a table scooon of green goddess seasoning from Trader Joe’s to pump up the taste of the sauce. But honestly, with the seasoning on the carrots, I don’t think it needed it. Both flavors together are so good!

    Can you use goat cheese instead of Feta in the dressing? Or, could you put crumble goat cheese over the carrots while using the Feta in the dressing-- would the 2 cheeses work together?

    Amazing some of my family doesn't like carrots, they loved this! The green gods sauce is amazing that will pair with anything! I wasn't sure about the mint put.less in still amazing. Next time I might try cilantro instead of parsley. Either way BOmB !!! Thank you
