Press tofu, then add to a pan with sesame oil
Sauté tofu until crispy on all sides, then set aside.
Sauté scallions and garlic until softened
Add mushrooms and cook until slightly browned
Add pad thai sauce ingredients and stir well
Add cooked rice noodles and stir
Add spinach, cilantro, chives, peanuts and tofu
Serve with lime, peanuts, red pepper flakes, cilantro, etc.
