Description
This Winter Fruit Salad combines seasonal favorites like mandarin, apple, pomegranate and kiwi with a honey orange poppyseed dressing. It only takes a few minutes to make and it's great for serving at Christmas brunch, or spooned over yogurt and granola.
Ingredients
Fruit Salad:
- 1 1/2 cups quartered grapes
- 1 1/2 cups pomegranate arils
- 1 1/2 cups diced honeycrisp apple (tossed in 1/2 tablespoon lemon juice)
- 1 1/2 cups mandarin or tangerine segments, halved
- 1 1/2 cups diced mango
- 1 1/2 cups diced kiwi
- 1/4 cup finely chopped fresh mint
Dressing:
- 2 tablespoons orange juice
- 1 teaspoon orange zest
- 1 tablespoon lemon juice
- 1-2 tablespoons honey (depending on your preferred sweetness)
- 1 teaspoon poppy seeds
Instructions
- In a small bowl, whisk together the dressing ingredients.
- Add all salad ingredients to a large mixing bowl. Pour dressing over the top and toss until well combined. Enjoy right away or refrigerate and enjoy within 5 days.
Notes
Star fruit is a cute, festive garnish if you're serving this for Christmas.
Vegan - Substitute honey with maple syrup, agave or another sweetener of choice.
Fruit - There are so many types of fruit that would be delicious in this fruit salad! If you don't care about seasonality, feel free to add in some berries (strawberries, raspberries, blueberries), or you can add other fruits like pineapple, banana, cherries, dragon fruit, passion fruit, etc.
Mint - If you don't like fresh mint, just leave it out!
