Description

This Grapefruit Mimosa is a tart twist on a classic mimosa. With just 3 ingredients, this super simple cocktail is perfect for brunches, entertaining, or special occasions like Mother's Day.


Ingredients

  • 4 1/2 fl oz dry sparkling wine, chilled
  • 1 1/2 fl oz grapefruit juice, chilled (we used unsweetened)
  • 1/4-1/2 fl oz simple syrup
  • For garnish: grapefruit slice, strawberry slices, or raspberries

Instructions

  1. Add grapefruit juice and simple syrup to a cocktail shaker half-filled with ice.
  2. Shake thoroughly to combine, then pour into your glasses.
  3. Top with sparkling wine of your choice.

Notes

Sparkling wine: For this recipe, we're using sparkling rosé, but any sparkling wine will work just fine. Feel free to use Champagne or Prosecco in this recipe (it just tends to be more expensive). 

Grapefruit juice: Freshly squeezed is always best!

Skip the simple syrup: If you don't want to use simple syrup, just use a sweetened grapefruit juice instead. Or, for a less sweet cocktail, leave it out altogether. 

Everything tastes best chilled: For the most refreshing cocktail, chill all of the components of this grapefruit mimosa for several hours before assembling. Since there are only 3 ingredients in this cocktail, having chilled ingredients makes a big difference. You can even chill the champagne flutes if you'd like!

How to make simple syrup: Bring equal parts sugar and water to a simmer in a small saucepan, stir until sugar dissolves, remove from heat and let cool. Simple syrup stores well in the refrigerator, so we love making a big batch for later use.
