Passion Fruit Mojito

Description

Sweet, tart and refreshing, this easy Passion Fruit Mojito is a tropical take on a classic cocktail. With rum, passion fruit juice, lime, and a bit of sugar, this mojito will make you feel like you're on vacation with every sip.


Ingredients

  • 3 fl ounces passion fruit juice
  • 2 fl ounces white rum
  • 3/4 fl ounce freshly squeezed lime juice
  • 1 tablespoon turbinado sugar (or regular granulated sugar)
  • 8 large mint leaves, torn (plus more for garnish)
  • Optional: 1/2 of a passion fruit (seeds and juice)

Instructions

  1. Add lime juice, sugar and mint leaves to a tall cocktail glass. Muddle gently to release the oil from the mint leaves and macerate the sugar. Don't over-muddle – if the mint is too bruised, it will start to taste bitter.
  2. Fill the glass with ice, then pour in the passion fruit juice, lime juice, and rum. Stir well to combine. Optional: garnish with a passion fruit half and a sprig of mint.

Notes

Rum: You can used dark (spiced) rum if preferred, but it will have a much stronger flavor than white rum. White rum is traditional in a mojito.

Add some bubbles: If you enjoy the carbonation of a classic mojito, you can add a splash of club soda or sparkling water to your cocktail.

Garnish: We love to garnish these passion fruit mojitos with a sprig of mint and a passion fruit half, to feature some of the cocktail ingredients. You can even scoop some of the passion fruit seeds directly into the cocktail for extra flavor.

What to do if you don't have a muddler: If you don't have a muddler, you can use the handle of a wooden spoon to mash the mint. It won't work as well as a muddler, but it should do the trick.

Passion fruit is ripe when the exterior of the fruit is extremely wrinkly. If the exterior is smooth, it's not ripe.
