Melon Yogurt Popsicles

Description

These easy melon yogurt popsicles are a great summer snack. Hints of lime and mint keep these melon popsicles super light and refreshing! 


Ingredients

Units Scale
  • 3 packed cups of fresh melon of choice*, cut into 1 inch cubes
  • 1/2 cup fresh mint leaves
  • 1 1/2 tsp lime zest
  • 3 tbsp freshly squeezed lime juice
  • 1 cup vanilla yogurt
  • 2-3 tbsp agave, honey or maple syrup

Instructions

  1. Blend all ingredients in a high speed blender until smooth.
  2. Pour the mixture into popsicle molds. Freeze for 4-6 hours minimum and enjoy!

Notes

*Melon: We've left it up to you to pick the melon of your choice. Honeydew, cantaloupe, and watermelon will all taste great, so just go with whichever you prefer. These melon popsicles will definitely taste best with super ripe melon, so we've included some tips in the FAQ section above for picking the best of the bunch!

Mint: We highly recommend using fresh mint for tons of fresh flavor. Be sure to tightly pack the leaves into your measuring cup. These would also be fantastic with basil! If you're serving for picky kids, you can feel free to leave the mint out. 

Agave: feel free to sub with another liquid sweetener like honey or maple. If you'd prefer to go sugar free, you can leave it out altogether. 

If you're having trouble removing the popsicles from the molds, you can try running them under slightly warm water for a few seconds, or just place them on a counter for 10 minutes so they very slightly melt on the edges and become easy to remove.

Storage: Stack popsicles in an airtight container, with sheets of parchment paper in between each popsicle to prevent sticking.
