Description
Peach butter is apple butter's summer counterpart, and it's absolutely delicious. This easy peach butter is perfectly sweet, smooth, spreadable and super concentrated in peach flavor. It's mostly a hands-off recipe that comes together in a slow cooker. Once it's done, can some for later, and use it on toast, yogurt, oatmeal and more.
Ingredients
- 5 lb peaches (13-15 peaches, weighed with pits in)
- 3/4 cup granulated sugar
- 1/4 cup lemon juice (1 large lemon)
- 2 cinnamon sticks
- 2 teaspoons vanilla extract
Instructions
- Peel the peaches: Bring a large pot of water to a boil and prepare a large bowl with ice water. Score an "x" on the bottom of each peach, cutting just through the skin, then boil each peach for about 45 seconds.
- Immediately transfer the peach to the ice water and leave it there for a few minutes, until it's completely cool. You should be able to easily peel off the skin starting from the "x".
- Once the peaches are peeled, carefully dice and remove the pits. (They will be very slippery!)
- Make the peach butter: Add all of the peaches, sugar, lemon juice, cinnamon sticks and vanilla to a slow cooker and stir.
- Cook on low for about 3 hours, or until the peaches are very soft, then use an immersion blender to blend until smooth.
- Continue cooking on high for another 3-5 hours, stirring occasionally, until it reaches your desired consistency. I leave the lid slightly ajar to let out steam. If it's taking too long to thicken, you can transfer the peach butter to a pot on the stove for about 20 minutes over medium heat to further reduce/thicken.
- Let the peach butter cool completely before transferring to jars/containers. It will last for about 3 weeks in the refrigerator. For longer storage, you can follow a water bath canning procedure.

Serving suggestions: This easy peach butter is perfect slathered on top of toast, bagels, waffles, english muffins, or mixed into yogurt or oatmeal. It's also delicious on top of ice cream, paired with cheeses on a charcuterie board, or even added to a savory glaze for chicken, pork or turkey!
