What you'll need:

Add raspberries to a fine mesh sieve and place over a bowl. Use a cocktail muddler or a wooden spoon to muddle the raspberries, pressing the juice through the sieve into the bowl.


It may take several passes with a spatula or spoon to press out all of the juice. Scrape the bottom of the sieve to get any extra juices.

Pour raspberry juice, simple syrup, Chambord, and sparkling wine into a champagne glass and give it a gentle stir. Garnish with fresh raspberry and enjoy!
