What you will need: 

In a smaller bowl, whisk together the honey, olive oil, salt, vanilla, and cinnamon.

Pour honey mixture over the cashews and stir until cashews are completely coated, making sure to scrape down the sides of the bowl.

Spread the cashews in a single layer onto a parchment paper-lined baking sheet and bake at 300˚F / 150˚C for 20 minutes. Stir the cashews every 5 minutes and turn the tray after 10 minutes to ensure even cooking. Cook until golden brown - depending on your oven, this may take more than 20 minutes.

Remove cashews from the oven and let cool for 5 minutes. Add sugar to a medium-sized bowl, and then pour in the cashews, stirring them well to coat in sugar.

Spread the cashews back out onto parchment paper and let them cool completely for 45 minutes to harden up.
