Description

This Tzatziki Chicken Salad is filled with chopped rotisserie chicken, cucumbers, kalamata olives, and feta coated in a lusciously creamy homemade tzatziki sauce that's packed with greek yogurt, tangy lemon juice, and fresh herbs. It only takes about 20 minutes to prepare and is a perfect make-ahead lunch or last-minute dinner on busy weekdays!


Ingredients

For the Tzatziki Dressing:

  • 1/2 cup grated English cucumber
  • 1 cup plain Greek yogurt
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 teaspoon garlic powder
  • 1 1/2 tablespoons flat leaf parsley, chopped
  • 1 1/2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh mint, chopped
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon black pepper

For the Chicken Salad:

  • 3 cups rotisserie chicken, finely chopped
  • 1 cup English cucumber, diced
  • 3 tablespoons pitted kalamata olives, finely chopped
  • 3 tablespoons red onion, finely chopped
  • 1/4 cup + 2 tablespoons crumbled feta cheese

Instructions

  1. Grate a cucumber using the larger holes on your grater. To get rid of as much moisture as possible, place the cucumber onto 2 to 3 layers of paper towels and squeeze well.
  2. In a large bowl, add the yogurt. Slowly whisk in the olive oil until it is well incorporated. Stir in the lemon juice, grated cucumber, garlic, parsley, dill, mint, salt, and pepper. Set dressing aside while you prepare the other ingredients.
  3. Finely chop the onion and add it to a small fine mesh strainer.  Rinse under very hot water for 45 seconds. Repeat with cold water. This will help to take the bite out of the raw onion.
  4. Slice your cucumber in half lengthwise and use a spoon to scrape the seeds out.  Cut the cucumber into ¼ to ½-inch pieces.
  5. Add chicken, cucumber, olives, red onion, and crumbled feta to the bowl with the dressing. Using a rubber spatula, stir to combine until the mixture is fully coated in the sauce.
  6. Before serving, garnish with additional crumbled feta and a sprinkle of chopped fresh herbs, if desired. Serve as is, with crackers or veggies for dipping, or on sliced bread to make a sandwich.

Notes

The tzatziki sauce can be made ahead and will become more flavorful the longer it sits. It will stay fresh in an airtight container in the refrigerator for up to 3 days.

To make this chicken salad dairy free, you can use dairy free greek yogurt and feta.
