4 oz passion fruit vodka* 2 oz pineapple juice (or passion fruit juice) 1 oz freshly squeezed lime juice 1 oz simple syrup* 4 fresh passion fruits, halved 2 oz sparkling wine or prosecco

Pour in liquids

Fill a cocktail shaker halfway with ice. Pour in vodka, pineapple or passion fruit juice, simple syrup and lime juice.

Passion fruit + shake

Slice each passion fruit in half and use a spoon to scoop out the seeds into the cocktail shaker. Secure lid and shake vigorously for a slow count of 10-15 seconds. It's important to shake well so the passion fruit distributes throughout the cocktail. Strain the passion fruit martini into two glasses and top off with about 1oz each of Prosecco. This is optional – it tastes great without, too. We just like a tiny but of fizz!

Tips

– If you don't mind the texture of passion fruit seeds (I love them!), you don't have to strain them out when serving this cocktail. You can make this passion fruit martini up to 2 days before serving. It won't taste quite as fresh after the first 12-24 hours, but it still tastes great! We suggest waiting to add the Prosecco/sparkling wine until just before serving so it doesn't go flat.
