These sunbutter cookies (aka sunflower seed butter cookies) are crunchy on the outside, chewy on the inside, and packed with the earthiness of sunflower butter and the sweetness of brown sugar. They're vegan, gluten free optional, and SO delicious!

What you'll need:

Add tomatoes, onion, jalapeño and garlic cloves to a large mixing bowl. Toss with vegetable oil, salt and cumin until well coated.

Roast at 400˚F / 205˚C for 15-20 minutes, stirring halfway through.

Transfer everything to a blender or food processor with lime juice and blend for 20-30 seconds. Stir in fresh cilantro before serving.
