We recently learned how to make an authentic daiquiri. I can assure you with hat they're infinitely better than any daiquiri mix or frozen daiquiri sugar-bomb creation you've ever had. And this strawberry rhubarb daiquiri takes the cake for my favorite flavor.

The original daiquiri is a perfectly balanced cocktail - tangy, sweet and slightly sour. It typically consists of three simple ingredients: fresh lime (or other citrus) juice, simple syrup and rum. The quality of each ingredient matters tremendously. So if you're making one at home, be sure to use freshly squeezed juice, homemade (or very high-quality) simple syrup, and high-quality rum.
We gave the classic recipe a refreshing Spring treatment using everyone's favorite seasonal produce: rhubarb! It's easy to make a fresh rhubarb strawberry purée. Description
This is a perfectly balanced cocktail - tangy, sweet, sour - and it utilizes some of the rhubarb you bought last week!
Ingredients
Strawberry Rhubarb Puree:
- 1 ¼ cup rhubarb, sliced
- 1 ¾ cup strawberries, sliced
- 1 cup water
- 1 tbsp agave syrup
Mint Simple Syrup:
- 1 cup water
- 1 cup demerara sugar
- 1 cup fresh mint leaves (optional)
To make drink:
- 2 oz Rhubarb Strawberry puree
- 1 ½ oz Anejo Rum
- ½ oz Cointreau
- ¾ tsp mint simple syrup
- ½ oz lime juice
Instructions
Puree:
- Steam rhubarb slices for 3-4 minutes to soften for blending. Blend well with strawberries, water, and agave syrup. Strain through a fine mesh colander to remove pulp.
Simple Syrup:
- In a small saucepan over medium heat, bring water and sugar to a simmer. Stir until sugar is dissolved. Remove from heat, add mint leaves, cover and let sit for at least one hour. Before using, strain to remove any mint.
To make drink:
Add all ingredients to a cocktail shaker filled halfway with ice. Shake mixture vigorously for 10 seconds. Pour into glass, garnish with fresh mint and enjoy!
