Let me just start out by saying that you need this salsa in your life. It’s the ideal appetizer for any summer gathering, and we love eating it plain with tortilla chips, but it’s also fantastic with tacos, as a bruschetta topping, or with grilled fish, chicken or a vegan alternative. Refreshing, seasonal and delicious!
We suggest serving with our favorite Siete grain free tortilla chips and an extra large margarita. Strawberries, avocado and cucumber pair perfectly for a refreshing salsa.
- 1 cup diced strawberries
- 1 ripe avocado, diced
- 1/2 cup diced and peeled cucumber
- 1/4 cup finely diced rhubarb
- 3 tbsp shallots, finely minced
- 1 tbsp cilantro
- 1 1/2 tbsp freshly squeezed lime juice
- 1 tbsp finely diced jalapeno
- 1/2 tsp agave syrup
- 1/4 tsp salt
Add all ingredients to a large bowl and stir to combine. For best results, let sit in refrigerator for an hour before serving. Enjoy!
Rhubarb is optional – you can always sub with more strawberries if desired.
