Let me just start out by saying that you need this strawberry avocado salsa in your life. It’s the ideal appetizer for any summer gathering. We love eating it plain with tortilla chips. It’s also fantastic with tacos, as a bruschetta topping, or with grilled fish, chicken or a vegan alternative. Refreshing, seasonal and delicious!
We suggest serving the strawberry avocado salsa with our favorite Siete grain free tortilla chips and an extra large margarita. Try our Kombucha Margaritas. You can sub the blood oranges for regular orange or another seasonal fruit, like fresh strawberries! Or if you’re not a tequila person, this Tropical Rum Punch will do the trick!

Strawberries, avocado and cucumber pair perfectly for a refreshing salsa.
- 1 cup diced strawberries
- 1 ripe avocado, diced
- 1/2 cup diced and peeled cucumber
- 1/4 cup finely diced rhubarb
- 3 tbsp shallots, finely minced
- 1 tbsp cilantro
- 1 1/2 tbsp freshly squeezed lime juice
- 1 tbsp finely diced jalapeno
- 1/2 tsp agave syrup
- 1/4 tsp salt
Add all ingredients to a large bowl and stir to combine. For best results, let sit in refrigerator for an hour before serving. Enjoy!
Rhubarb is optional – you can always sub with more strawberries if desired.
