Rhubarb Berry Smoothie Bowl

Ingredients

  • 1 banana (frozen or fresh
  • 1 cup fresh rhubarb, sliced
  • 1 cup frozen strawberries
  • 1 cup frozen raspberries
  • 2 tbsp coconut water
  • 1 tsp lemon juice
  • 1 1/2 tbsp cashew butter (or other nut butter)
  • 11/2 tsp green powder (optional)
  • 2 tsp agave or maple syrup (optional)
  • pinch sea salt (optional)

Instructions

  1. Steam 1 cup sliced rhubarb for 2 minutes to soften so it blends better.
  2. Add all ingredients to blender and blend until smooth. Pour into bowl and top with whatever your heart desires!
