Well, it looks like we’ve gone straight from Winter to Summer, and we’re not mad about it! The last two weeks have been absolutely gorgeous here in Michigan – almost every day has been over 70 degrees and for the most part, sunny. We think it’s pretty well deserved after the winter we just had!
The drastic change in weather means we’ve been spending as much time as possible outside, enjoying some early summer produce, and generally pretending it’s already mid June. Is there really anything better than a beautiful summer night spent with friends & family, lots of food, and a good cocktail?
We’ve been using Bai Bubbles Sparkling Flavored Water for easy, healthy cocktail mixers all month – they’re delicious and come in unique flavors such as Lambari Watermelon Lime, Jamaica Blood Orange, and Bogotá Blackberry Lime, which we used in this Blackberry Gin Spritzer. The best part is that only contain 5 calories and 1 gram of added sugar! If you read yesterday’s post, you know that we’ve been trying to cut back on added sugar recently, so it’s great to still enjoy a cocktail without stressing over sugar content! If you do prefer a sweeter cocktail, we’ve included instructions for adding a touch of agave with the muddled blackberries.
Now that we’ve covered cocktails (obviously the most important part), here are a few suggestions on building the perfect vegan snack board!
1. If you’re going for something Instagram-worthy…
It’s all about color coordination! As you can see here, we used all purples, pinks and greens, which really complement one another. Especially during summer, there are so many beautifully-hued fruits and vegetables available, so you shouldn’t have any trouble finding plenty of seasonal produce for whichever color palette you decide to go for.
2. If you’re going for something with lots of options…
In addition to fresh veggies and fruits, every good platter has a few unique dips and spreads, along with some crackers, breads, or other crunchy elements (think nuts, seeds, etc). This platter in particular includes a homemade Lemon Dill Yogurt Dip (top right), white bean hummus and a gorgeous beet hummus (always a showstopper!), plus a few of our favorite crackers.
3. If there are multiple dietary restrictions/requests…
Include a little something for everyone. Almost every person in our family has different dietary preferences/restrictions, so many of our platters have a little bit of everything, including cheeses and meats for those that are not vegan, regular bread for those that are not gluten free, nut-free crackers and dips for those with allergies, etc. Luckily, the one thing we can all agree on is the cocktail!Print
We’ve been enjoying these refreshing spritzers with a big spread of vegan snacks!
- 4 blackberries, muddled
- 2 oz gin
- ½ oz fresh lime juice
- Bai Bubbles Bogotá Blackberry Lime (to top off)
- Optional: ½-1 oz agave
- Crushed ice
- For garnish: Mint, cucumber, blackberries
- In a wide glass, muddle 4 blackberries with muddler or back of a spoon. OPTIONAL: add ½-1 oz agave while muddling if you’d prefer a sweeter cocktail.
- Pour in gin, fresh lime juice and crushed ice. Stir well.
- Top off with Bai Bubbles and stir gently. Garnish with mint, cucumber and blackberries (optional). Enjoy!
If you’d prefer to add a bit more sweetness, add 1/2-1oz of either agave nectar or regular simple syrup.
